The Island of Sumatra has a very specific method when it comes to processing their coffee, known as 'Giling Basah'. Due to the position and geography of the area, direct sunlight is hard to come by, which makes drying the coffee cherries a difficult task. So instead of waiting for the coffee to dry to around 12/13% moisture, the coffee is hulled when it’s still at around 30-35% moisture, which can often crush or split the coffee bean.
